The University of Colorado Connection
Within months of beginning to collaboratively research mushroom root (mycelium) together as CU °Ç¸ç³Ô¹Ï PhD students, Ìý(Civil, Environmental and Architectural Engineering) and Ìý(Mechanical Engineering)Ìýknew they had a nature-based tool for taking on many global issues. They decided to start a company that would guide fungi’s miraculous biotechnological power toward efficiently meeting humanity’s needs. When their deeper investigation of crafting protein from mushroom roots crossed paths with growing public alarm about the food system, they founded Emergy in 2015, now eat meatiâ„¢, a company that provides delicious, nutritiousÌýand Earth-friendly nutrition to everyone.ÌýThe core technology behind Meati Foods’ products involves mycelium-based fermentation to create meat alternatives. This technology was developed, in part, during their time as researchers at the °Ç¸ç³Ô¹Ï.
